If your looking for a last minute, fun dessert to bring to your New Years eve party try making these margarita cupcakes. Of course these would be nice to bring to any party. :)
This recipe makes about 24 cupcakes Cupcakes:
12 ounces Margarita mix (I used the mix with tequila in it) 3 ounces tequila ( I used patron) 1 box white cake mix
3 large egg whites
1/3 cup vegetable oil
1 Tbsp lime zest
BUTTER CREAM ICING:
1/2 cup butter 2 1/2 cups powdered sugar
1 shot of Grand Marnier green food coloring small lime slices or candy limes for garnish
Preheat oven to 350°F. Line two dozen cupcake tins with paper liners. Whisk together margarita mix and tequila in a small bowl. Measure out 1 1/2 cups for the recipe. Pour the rest in a glass on ice.
In a large bowl, blend cake mix, egg whites, vegetable oil, lime zest and 1 1/2 cups of the margarita mix. Blend on medium speed for two minutes. Spoon the batter into cupcake liners. Bake for 20, or until toothpick inserted in center comes out clean. Let cupcakes cool completely.
5. While the cupcakes are baking in the oven, prepare the icing. Place butter and powdered sugar in a large bowl and beat with electric mixer until fluffy. Add grand marnier. Mix until thick and creamy. Mix in a tiny amount of green food coloring for a green tint. Ice cupcakes, garnish with a lime, and add an umbrella if you'd like. ;)
